Pop of Color
If you know me, you’d know that I love UConn. And my grandfather’s art. So why not combine the two?
Once we can safely do so, Zest will be holding a Pop of Color event, with desserts with every color of the rainbow. 100% of the proceeds will go to Paul Zelanski Award of Excellence Fund at the UConn Foundation. How cool is that?
Since I love to plan, I have a menu all planned out. Sort of, it’s not official. I continue to come up with new ideas, so this list will continue to grow. But here you go!
- Charred lemon mousse with whipped blueberry Chantilly and light lemon sablé
- Dark chocolate, espresso, and amaretto spoon cakes
- Matchstick cookies
- Mondrian cake
- Pantone cookies
- Homage to Pa Paul apple pie – Greek yogurt pots de creme, spiced apple compote, cinnamon streusel, topped with a dehydrated apple slice
- Primary color macarons – lemon, vanilla bean, and raspberry chocolate options

Inspiration strikes people in different ways. For me, inspiration is simply doing the things I love and trying to spread kindness. I am eagerly waiting the day I can make this event happen, but for now, seek inspiration wherever you can!
